About Me
I’m a BBQ-obsessed dad, husband, and live-fire cooking fanatic. Based in Essex, I’ve spent years catering events, running BBQ demos, and competing in BBQ competitions. What started as a backyard hobby quickly became an obsession, leading me to master everything from smoked brisket to wood-fired pizza.
BBQ Without the Ego
Great BBQ should be simple, fun, and full of flavour, no gimmicks, just hands-on cooking. I founded Slim Ricks BBQ School to bring people together over fire and food, making BBQ accessible to everyone, whether you're a beginner or a seasoned cook.
Mastering the Fire
BBQ is more than just grilling, it’s about fire management, fuel selection, and heat control. Knowing when to cook low & slow or hot & fast makes all the difference. I love testing gear, so my students get hands-on experience with top-quality equipment (plus exclusive discounts!).

Cooking over fire isn’t just for grown-ups! At Mini Slims Kitchen, kids experiment with fresh ingredients, pick herbs, and gain confidence in the kitchen. Watching young cooks proudly serve their creations is always a highlight.
